Veg Pulao rice recipe Step-By-Step

  1. Begin by washing and soaking basmati rice for a minimum of 10 minutes.
  2. In a sturdy pot or pressure cooker, heat half of the clarified butter. Add the ingredients listed under ‘to temper’ in the specified order. Then, incorporate the vegetables, excluding the green peas. Sprinkle in the sugar and sauté for about 1 minute.
  3. Next, drain the soaked rice and add it to the vegetables. Carefully roast the mixture for an additional minute, taking care not to break the rice grains.
  4. Add 1 ¾ cups of water to the pot along with salt and kewra water. Bring the mixture to a boil for 2 minutes. At this point, the rice should be partially cooked. Reduce the heat and introduce the green peas into the mixture.
  5. Cover and cook the pulao on low heat for 10 minutes. Once done, gently fluff the rice with a fork, being careful not to mash it (just 2-3 turns will do).
  6. Set the pulao aside for 5 minutes. Meanwhile, in the remaining clarified butter, fry the cashews until they turn golden and crisp. Add them to the pulao just before serving. Allowing the rice to rest is crucial for achieving a fluffy and tender texture.
  7. This pulao pairs wonderfully with any rich, creamy gravy, making it an excellent accompaniment to the no onion no garlic variant.
